Ginger Energy Bites

These little bites are just what you need after doing a four-minute plank. Yes, I did FitFluential’s #FFAprilAbs challenge, which means doing a plank per day in April. If you follow me on Twitter (@kokobrill), you saw my progress. On April 1st, I started off with a 2-minute plank, and now I have worked my way up to 4 minutes and 5 seconds which is ridiculously hard. Anyone who tells you otherwise is a liar!! I once read that Ryan Gosling was so busy that to stay in shape for a movie he was in he only had time to do an 8-minute plank per day. That is insane. Anyway, my goal for the April Challenge was to work my way up to 5 minutes by April 30th but that was a bit ridiculous, so I’ll stick with my 4.05 and I’m pretty happy with that! I was purely motivated by these Ginger Energy Bites right and throughout my entire plank I would repeat to myself “I can do anything for 4 minutes” and then “I get Ginger Energy Bites in 3 minutes” “I get Ginger Energy Bites in 2 minutes” until I have counted down to zero. I live a sad little life…..
Enough chit-chat, here’s the recipe 😉
Oh, I should mention that the measurements are approximate because when I made these I didn’t yet have measuring cups or spoons here in New Zealand….or a bed….but thankfully we have one of those now. Haha!

A tasty little burst of gingery goodness in bite-size to sustain you throughout the day.
Ingredients:
- Raw Almonds – 1/2 cup
- Raw Cashews – 1/2 cup
- Dates – 1/2 cup, pitted
- Chia Seeds – 1 Tbsp
- Fresh Ginger – 1/2-inch Piece
- Sea Salt – A Pinch
Instructions:
Combine all ingredients in a high-speed blender, or small food processor and blend until mixture starts to ball together. Roll into tablespoon sized balls and refrigerate or freeze for later.

I am so happy to know this is not made with candied ginger, but fresh ginger! They look awesome, Koko.
Hooray for your 4-minute-plank!! I can manage 1…maybe 2, but 4? You are super, Koko.

Have just made some of these – they are so tasty and so easy and quick to make – I think I will be making more of these pretty soon as they aren’t going to last long – yum.

Thanks, lady!! 🙂

Thank you!! I bet you could do one minute!! It’s not tooo hard to work your way up, adding 5 seconds at a time or so. But I wouldn’t say it’s “fun” haha!

Yes, fresh ginger!! I like adding my own level of sweetness with the dates. And nothing beats fresh ginger!
Thank you Angie!

Woo-Hoo sista! Four minutes is something to be proud of indeed! Just awesome. I too have been planking and to add a little twist have been doing so on my medicine ball (balancing with clasped hands on the ball – much trickier to maintain balance + stability me finding!) — these energy bites are the perfect reward 🙂 and I’m all about the countdown too. Love the addition of fresh ginger and salt – that critical electrolyte that also happens to taste delish. These also look great KoKo – well done.

Oh, that is so tough!! I have tried that at home before with a physio ball, and it’s such a challenge! No way I could do four minutes of plank in that style! I can’t wait to get a gym membership here and get working out with some equipment again! Thanks Kelly!

4-minute plank, brillant job, Koko, keep it up!!! I can’t even last a 4-minute, so I am admiring you already…An 8-minute plank? No way… what? I have a crush on Ryan Gosling (shhh). Goodness, these fresh gingery and nutty bites look pretty delicious, especially with the addition of sea salt and I love the fresh and raw ingredients you use! I’m bookmarking this recipe, you’re inspiring me to do a plank right now, but I’m in a car right now, haha…. xx

Thank you! Yes, who doesn’t have a crush on Ryan Gosling!
Hahaha yes, planking in a car is not advised.

Oh, I’m not doing 4 minutes of planking on the ball that’s for sure! (although I’d like to work up to it) but I do find it brings that next level of balance/stability challenge I was looking for and… I ordered my medicine ball from Amazon!! 🙂 It may sound a little retro but you would not believe all the exercises you can do with a medicine ball — they are truly awesome and worth having at home. I highly recommend them 🙂 http://greatist.com/fitness/25-must-try-medicine-ball-exercises (and not expensive at all).

Thank you for sharing those exercises- I would love to try those! I’ve favourited them. We are literally living in the teeniest space right now, and I don’t have any room to work out, and I don’t have any weights, either. I think a medicine ball is an awesome idea where I could use just one thing (instead of buying a range of 5-25lb free weights). I would still have to do these exercises outside but that’s okay! Haha! I’ve found a gym near my soon-to-be work, too, so I could always print these off and take them there if I sign up!
