A look at the incredible food I was able to enjoy in Europe on my honeymoon. And I mean TRULY enjoy!
In years past I would have spent far too much time obsessing over calories and coming up with ways to exercise them off, and then feeling guilty and ashamed for allowing myself to go against my “food rules”. I wouldn’t have been able to enjoy it.
This trip wasn’t my first since beginning intuitive eating but it really drove home the changes that I have been able to integrate in mind and body over the past few years.
Diet culture used to rule my life and now I hardly ever think about it. I’m so happy I could focus on the fun and adventure of my honeymoon instead of worrying about how I looked.

The light hitting just right 😍 I tried making these pistachio feta phyllo bites from @foodmymuse and they were so delicious! Crunchy, buttery and salty, with a bit of sweetness from a drizzle of honey and the apricot jam (which I subbed in as I couldn’t find fig preserves.)

Pai in Toronto was awesome!! The menu was great and every single dish we ordered was so flavourful and satisfying. We didn’t have a reservation (on a busy Saturday night!) but were able to enjoy a bucket of booze at the bar while we waited 😅 the atmosphere was relaxed and fun and the food was fantastic. And yes… we were dressed as cowboys🤠

Breakfast for dinner is always a good idea - and a

Breakfast for dinner is always a good idea - and a super fun dinner party theme! The PJs are a must (for the food coma to come) 😴

Tofu scramble
1 Tbsp olive oil
Half a medium onion, diced
Half a bell pepper, diced
1 block extra firm tofu
3 tbsp nutritional yeast
1/2tsp salt
1/4 tsp turmeric
1/2 tsp garlic powder
1/4 tsp smoked paprika
3 tbsp oat milk
fresh chives and fresh parsley

In a pan over medium heat medium heat, drizzle half a tbsp of olive oil and add peppers and onions. Cook for a few minutes until softened, stirring occasionally.

In a food processor, add tofu, nutritional yeast, salt, garlic powder, turmeric and smoked paprika. Pulse mixture together until it is a finely crumbly texture. Do not puree!

Stir in oat milk, remaining 1/2 tbsp of olive oil and add to the onion/pepper mixture, heating through for a few minutes.

Stir in some chives and parsley, add a pinch of black pepper and adjust salt if needed.
